I guess a good sign that we’re finally feeling settled is that I’ve started to bake again! Having a new portable dishwasher also helps so I don’t have to hand-wash the dishes anymore. It feels more like home now that we can eat on our our everyday dishes again instead of paper products. We had a very busy weekend with the moving sale, so by the time Sunday morning rolled around, we were ready to take it easy. Home-cooked meals always help! I usually make these German apple skillet pancakes at the beginning of Autumn when the apple harvest starts to come in. This recipe is really easy to make, and you can find the recipe below. The recipe says it serves 2, but I can usually feed 4 with it. They’re light, fluffy, and delicious!
We still don’t have a dining table or some other key pieces of furniture. As soon as we get them, I’ll post some pictures of the rental cabin. Luckily, we’ve been able to enjoy late Summer weather up here and eat our meals outside on our camping chairs. Some of the leaves are already starting to turn, so I’m not sure how long that will last. We both love every second up here and feel so blessed to call this new place home!
We have one more week until we close on our little Bountiful farmhouse.
