Since Andy has to travel every other week for work, I like to make him some home-baked goodies to take with him on the road so he can have a little piece of home with him. Over the weekend, I made three different desserts, although one was for me and two were for him! I made him traditional chocolate chip cookies and cherry pocket pies because both are easy for him to eat while driving. Sunday baking is really enjoyable for me, and I especially love to do it in the Autumn and Winter. There’s nothing like comfort food this time of year!
I’m always looking for good recipes to use, so I’ll share some of the ones that we use over and over. I use this recipe to make the cherry hand-held pies, although this one would be especially yummy for Thanksgiving. Unfortunately, the pocket pie molds are no longer available from Williams Sonoma, but they might be available at other locations. For the chocolate chip cookies, we like this recipe the best. The cake flour really makes a difference in these cookies!
The other dessert I made is one that I featured in Wilma Magazine September 2017 issue (for those who subscribed). It’s a maple walnut cake that I make every Autumn. Andy is not a fan of walnuts, so I end up making it and eating it when he’s out of town. I only make it once a year for that reason, but around this time I really start craving it because it’s so delicious. It’s the perfect Autumn cake.
Funny enough, the floor of the rental cabin slopes, so all my cakes come out lopsided (hence the lack of pictures). We’re going to have to try and level the oven at some point, but it can be quite frustrating baking. At least it still tastes good! What are your favorite items to bake this time of year?
